Ingredients:

  • 5 kg boneless ham;

  • 2 liters of ginger beer;
  • 2 clementines;
  • 20 cloves of garlic;
  • 3 Bay leaves;
  • 5 carnations;
  • 2 tablespoons English mustard;
  • 4 tablespoons ginger syrup
  • 3-4 cm of ginger root, cut into thin slices.

How to cook:

  1. Put the ham in a deep saucepan.
  2. Pour ginger beer over it.
  3. Peel the onion, cut it into 4 pieces, and add it to the pan.
  4. Add the Clementine halves.
  5. Add 5 cloves and 3 Bay leaves.
  6. Add enough water to the pan to cover the ham.
  7. Bring to a light boil, cover with foil and cook for 2 hours, adding more water if necessary during cooking.
  8. Using large tongs, remove the ham from the cooking liquid and let it cool for 10 minutes until it cools.

Prepare it:

  • 1 kg of beef fillet;
  • 250 g of champignons;
  • 2-3 tbsp butter;
  • 100 ml dry white wine;
  • 1 sprig thyme;
  • 12 slices of bacon or prosciutto;
  • 500 g puff pastry;
  • 2 egg yolks with 1 tsp of water.

How to cook:

  1. Place the dough on a cutting surface.
  2. Preheat the oven to 220 degrees.
  3. Place the beef fillet on a baking sheet, brush with olive oil, and season with pepper. Bake for 15 minutes for a medium roast, or 20 minutes if you want medium.
  4. When the beef is cooked, remove it from the oven to cool, then chill in the refrigerator for about 20 minutes.
  5. Chop the mushrooms finely.
  6. Heat 2 tablespoons of olive oil and butter in a large skillet.
  7. Saute the mushrooms over medium heat with 1 sprig of fresh thyme for 10 minutes, stirring frequently, until you get a soft mixture.
  8. Add salt to the mushrooms, add 100 ml of dry wine and simmer for 10 minutes.
  9. Place the mushrooms on a plate and remove the thyme. Leave the mushrooms to cool.
  10. Cover a large cutting board with two overlapping pieces of plastic wrap. Place 12 slices of bacon or prosciutto on plastic wrap, slightly overlapping, in a double row.
  11. Spread half of the duxel over the bacon. Put the fillet on it and spread the remaining duxelles (mushroom stuffing).
  12. Use the edges of plastic wrap to wrap the bacon around the fillet.
  13. Roll out the dough.
  14. Wrap the fillet with the dough. Use a sharp knife to make beautiful diagonal cuts.
  15. Whisk the egg yolks with water, brush the top and sides.
  16. Bake at 180 degrees for 30 minutes.

Baked poultry

Baked duck or chicken are equally popular and worthily take their place in the top 3 new year's dishes. Flavorful, tender poultry meat and crispy crust appeal to even the youngest participants of the celebration.

Prepare it:

  • 1 chicken or duck carcass;
  • 1 head of garlic;
  • 1 tbsp mustard;
  • 1 tablespoon without a slide of honey;
  • 1-1. 5 tbsp salt;
  • 1 tsp ground pepper;
  • 1 tsp turmeric;
  • 2-3 tbsp sunflower oil.

How to cook:

  1. Peel the garlic and pass it through the press.
  2. Mix the garlic and all the spices recommended in the list in a bowl.
  3. Rinse the carcass, blot the moisture.
  4. RUB the carcass with a paste of spices and sunflower oil.
  5. Put it in a sleeve for baking.
  6. Put in the refrigerator overnight to marinate.
  7. Bake in the oven, preheated to 200 degrees, for 1.5-2 hours, depending on the weight of the carcass.
